HAMACHI
KAMA This is a great plate for anyone who wants a
cooked item, and a treat to a sushi connoisseur. It is the
shoulders and front fins of the yellowtail fish (hamachi).
They are oven roasted, served with eel sauce and an additional
special spicy sauce on the side, and garnished with sesame
seed. The meat of the fish is soft, tasty, and succulent.
Absolutely worthwhile!
A rare
treat, this appetizer is not always available, so be sure
to ask for it. Hamachi- Kama is not in the regular menu. Goes
great with either white or red wine. |

Wasabi
The scientific name of this plant is Wasabia
Japonica. Sometimes called the "Japanese horseradish",
this plant is original of Japan and can be found growing naturally
at the edge of river streams. It requires lots of water for
its cultivation.
What you
are served in a Japanese Restaurant is a paste made from grated
wasabi root. In Japan it is customary to grate the wasabi
on a grater made of shark skin. The wasabi paste used in Japanese
restaurants in the US is actually a "westernized"
version of wasabi. |

Shiso
This leaf is a staple of Japanese cuisine. A member of the
mint herb family, it is known as Perilla Japonica
or Shiso. Our sushi chefs also call it "Oba". It
has anti-inflammatory properties and is considered by many
as an important part of the sushi culture.
It is
not always available, since it is seasonal, but ask for it
and we will be glad to provide it, or it will be part of your
plate. It is usually served with Sashimi. Most sushi connoisseurs
will take a sushi roll or a sashimi piece with a small bite
of the shiso leaf... try it. Some others will even try ginger
and shiso together! It is a fun flavor to add to your plate! |
