What is Sushi?

We have had some customers ask us about the definition for sushi and what types of sushi are available at Kyoto. Before we explain this, it is important to let everybody know that we use the same type and quality of fish for all these different variations of sushi and sashimi. The same is true for the nori (dried seaweed leaf) that we use.

Sushi is a generic term for Japanese food made using fish and vinegarized rice. The fish can be raw, cooked, sauteed, vinegarized, etc. There are different types of sushi:

  • Nigiri-sushi - The classic ball of rice with a slice of fish on top
  • Maki-sushi - This is a sushi roll , with fish, rice, nori and other ingredients
  • Temaki-sushi - This is the hand-roll, where all the components are rolled into a nori cone
  • Gunkan-sushi - A nori cup with rice at the bottom and topped with fish, or fish eggs
  • Oshi-Suhi - Pressed sushi, with fish, rice, and other ingredients
  • Chirashi- sushi - A bowl or dish of vinegarized rice and different types of fish

Sashimi is a different presentation of different fish cuts without the rice.
